Full of healthy fats and protein, free from refined sugars, and low in naturally occurring sugar, this smoothie makes for a great, blood-sugar-stabilizing breakfast, snack, or post-workout drink. The chia seeds make it excellent for digestive health and skin, the strawberries add a healthy dose of antioxidants, and the coconut milk helps boost metabolism. The smoothie has a really creamy consistency that gives it a decadent feel.
Note: If you have a nut allergy, substitute the almond milk with more coconut milk, seed milk, or another dairy-free alternative and swap out the almond butter for a seed butter or just leave it out. If you want a sweeter smoothie, add a date.
Creamy Strawberry-Banana-Coconut Smoothie (GF, paleo, vegan)
Serves 2
Ingredients:
1 cup unsweetened almond milk
1 cup light coconut milk
1 cup frozen strawberries
1 ripe banana
2 tbsp almond butter
1 tbsp chia seeds
Optional: 1 date
Directions:
1. Place all ingredients in a blender and blend until smooth.
2. Serve chilled. Enjoy!
