This banana bread is sooooo good. Made from whole foods and containing a good amount of protein and healthy fat, no refined sugar, and very few ingredients, it's actually healthy to eat. Not just guilt-free, but actually, genuinely healthy. It's a staple in our household, and we also make it all the time for guests who, despite not being health obsessed like ourselves, also really, really love it.
This recipe is free from any added sugar, and unlike most other banana breads, it won't send your blood sugar through the roof. We regularly make it for people with diabetes as a diabetes-friendly dessert, snack, or breakfast. If you're looking for something more decadent and dessert-like, we've put an optional note to add some maple syrup. Either way, it's delicious and super easy to make (one bowl!) so definitely give it a try!
Grain-Free, Low Sugar Banana Bread
Makes 1 loaf
Ingredients:
3 ripe bananas, mashed
1/2 cup almond butter
3 eggs
1 tsp vanilla extract
1/4 cup coconut flour
1.5 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
optional: 1/4 cup maple syrup
Method:
1. Preheat oven to 350F.
2. In a bowl, mix together the banana, almond butter, eggs, and vanilla extract.
3. Add the coconut flour, cinnamon, baking powder, baking soda, and salt, and mix well.
4. Line a bread pan with parchment paper and pour the batter in.
5. Bake for 40 - 45 minutes, until a knife slides out without any residue.
